I’ve noticed some USB "issues" over the years. I have an ancient
Harmon-Kardon iSub and used to use them with my old G3 iMac
"built-in" speakers.
Now I have a Mac Mini and the same old iSub and some JBL (left and
right channel) speakers.
The "headphone" jack "should" override any external settings.
You should be able to choose "Headphone" as the audio "Out". But,
G5 machines use a different "connection" known as "optical" out.
The physical dimensions (and connection type) are a bit different for
headphones and "optical out".
You may need to look at some third party "adapters" to bypass the
optical connection.
Even Apple’s own speakers can’t be used as a "sound out" on most
G5’s without some physical modifier.
Life goes on. Crank it up and upset the neighbors. Or buy a USB
headset.
