Would one or the other perform better in a typical (yeah, I know!)
desktop environment (assuming a motherboard/processor combination
is capable of utilizing either)?

Alternatively, can you shed light on what sort of applications would
favor one or the other?

Are you running both at full spec speed? 4/6400 = 5/8000.
